A sense of place
MŌDAN explores progressive Japanese cooking through local and Japanese ingredients. Chef Jorge Mendez’s approach combines Japanese techniques with a tasting-menu format, previously served at an intimate counter in Cubao.
The restaurant’s official website currently says it is closed for now and describes TABIDACHI as its final Cubao menu before a move. A confirmed reopening date and new address were not available on that page when checked on 2 October 2026.
